I have been obsessed with making energy bites. At first glance, your eyes see a beautiful chocolate truffle, dense and rich, dusted in cocoa or coconut flakes... You can't wait to sink your teeth into these tiny morsels. But alas, your subconscious gets the best of you and you're suddenly remembering that diet you're on. You pry yourself away from enjoying a special treat, disheartened and unsatisfied. But wait! These are actually good for you, hear me out. The main ingredients of these babies are dates, almonds, and protein powder. No sugar, no butter, no flour. Not only are they healthy, you'll get a fresh buzz of energy after eating them. You'll feel amazing and your body will be thanking you. These are my go to afternoon snack and meet my daily need for chocolate. See recipe below!
Set aside 2-3 cups of pitted dates
In food processor blend the following dry ingredients:
1-2 tbs hemp protein powder
1 tbs raw organic cocoa powder, the real stuff. Don't skimp.
1/2 tbs cinnamon
1/2 cup raw almonds
1/2 cup raw peanuts (or other nut)
1/2 cup raw unsalted sunflower seeds
Optionals other ingredients: a sprinkling of chia seeds, flax seeds, etc.
Buzz all the above up (the dry ingredients, not including dates). Now, start adding in your dates (pitted of course. You'll need about 3 cups worth). I start by adding about 2 cups at first, then start to judge by what's happening in my food processor. You want the mixture to form a crumbling dough like consistency. Sometimes, I'll drizzle in 1-2 tbs of honey, if the mixture is too dry and I don't want to add any more dates. You want to be able to roll this dough into small balls without it being too dry or too wet. Use your best judgement! Once all my bites are rolled into bite size sections, I take a small bowl of cocoa powder or shaved raw coconut and coat the surfaces. These keep in your fridge for 1 week, within an air-tight container (I usually eat them all in about 4 days!).
